Pumpkin seed oil — once, a glass of dark pumpkin seed oil cost as much as a fairly massive gold ring.
Cold-pressed pumpkin oil, rich in color and flavor, is often used in vegetable salads, mixed with grape or apple vinegar, lemon or orange juice. A few drops enhance marinades and a variety of side dishes.
Roasted pumpkin seed oil is perfect for seasoning pizzas and even ice cream, as it has a stronger salty note and aroma. However, roasted seeds make up only 20% of the composition, so all the beneficial nutrients remain preserved in the oil.
Pumpkin seed oil is rich in vitamins A, D, B1, B2, C, PP, as well as zinc, copper, iron, manganese, magnesium, potassium, and calcium.
It can also be used externally. When applied to the skin, cold-pressed pumpkin oil may act as a natural protective agent against the sun.
